The Dolcetto grape variety has been documented in Piedmont since the Middle Ages. The Dogliani harvest decree of August 28, 1593, refers to “dossetti”; this citation leads us to believe that its cultivation was widespread in our lands since ancient times. However, it was only around the mid-19th century that we can speak of broad distribution. The sweetness of the grape—so much so that it is also consumed as a table grape—gave it its name. Conversely, however, the wine is dry.
