Food pairings: It is well prepared with local appetizers, such as tomini al verde, vitello tonnato, Russian salad and hors d’oeuvres of cured meats; it expresses its best qualities with first courses, such as potato gnocchi, tagliolini with clams, with simple second courses such as asparagus in sauce or cold with cardoon cake, but also with second courses such as almost elaborate roast veal, truffle eggs and especially with fish dishes such as perch and cod fillets, grilled scampi. Harvest: manual harvesting in mid-September with careful selection of the grapes.
Vinification: crushing, destemming and subsequent pressing in a lung-shaped press. The next processes are the clarification and racking, followed by the fermentation. The batonage is then carried out 2/3 times a week for about a month on the fine lees (or Nobili).
This is followed by clarification and cold stabilization in steel tanks at -4ºC.
Aging and storage: the wine ready at the beginning of the new year, goes immediately on the market, without aging, choice evaluated and adopted by the company in order to preserve the fruity, varietal and characteristic of Roero that has always distinguished the company.
