In the vineyard, in addition to leaving fewer buds on the fruiting head, we let the grapes ripen for a week longer than the Barbera d’Alba.
\nIn the cellar, thanks to a 15\u201318 day maceration on the skins, we achieve a wine with great structure and typical acidity, beautifully balanced by the alcohol.
\nAfter vinification, it is aged for 12 months in medium-toasted oak barriques. <\/p>\n

\nBouquet: <\/strong>broad, fresh, and fruity bouquet, intense, with light notes of vanilla on the finish, cherry and wild berries, but also notes of undergrowth, licorice, and cocoa.
\nPalate: <\/strong>juicy, austere, elegant; with proper bottle aging (at least 2 years from bottling), the acidity reaches greater balance.
\nFood pairings: <\/strong>Pairs perfectly with very flavorful dishes. Excellent with pasta starters with game ragout and braised or grilled red meats and aged cheeses. Also a perfect glass for an aperitif with snacks and cold cuts. <\/p>\n
