\nSelection begins in the vineyard, leaving fewer buds on the fruiting canes, and continues in the cellar thanks to a long maceration on the skins for about 20 days.
\nOnce vinification is complete, we proceed with aging in medium-toasted oak tonneaux for 18 months.

\nBouquet: <\/strong>notes of overripe red fruit emerge with pleasant hints of vanilla on the finish. Despite the aging and time in wood, it retains the characteristic aromas of the grape variety on the nose.
\nPalate: <\/strong>clean, direct, and elegant at the same time, it has a pleasantly persistent and velvety intensity in the mouth. Significant tannins, very characteristic of Nebbiolo. An austere wine with great body and structure. It maintains an unexpected freshness even after aging.
\nFood pairings: <\/strong>Warm and well-structured with significant, typical tannins, it pairs well with mature cheeses, expressing its best qualities with substantial meat dishes (game and roasts) and equally rich first courses (such as agnolotti or tagliatelle with meat sauce).<\/p>\n
